Almond β-glucosidase activity in the presence and absence of heat-inactivated human saliva. Almond β-glucosidase was measured in a reaction containing phosphate buffer () and phosphate buffer with 25 μL of heat-inactivated human saliva (). The background activity of the heat inactivated saliva () and phosphate buffer both without almond β-glucosidase () were also measured. Each treatment and time point was measured in duplicate. The data points represent average values ± SD
